And the sloping sides of an omelette skillet will make it easier to move the eggs around while cooking – particularly if you want to master egg flipping! It also helps to ease the finished omelette out of the pan and onto the plate without breaking. 

Also, look for a good handle. Some of this is for the quality and longevity of the pan. A handle that is attached to the omelette pan with rivets will last longer than one attached with screws.

You might also look for a stay cool handle so that you can cook easily without needing hot mitts. In the end, you want something sturdy that feels heavy in the hand, but not too heavy.
