Marinated Carrots Recipe - Spanish Carrots

The first time we had this Spanish carrots recipe was at a tapas bar in Seville on quite a hot day. Zanahorías aliñadas is a marinated carrots recipe and a good way to use up a bag of carrots that have been sitting in the fridge. They also make a good side dish for any roasted meat or fish, or an easy-to-make-ahead addition to a tapas night.

Ingredients

  • 7-8 large carrots peeled (about 1 pound)
  • ½ teaspoon salt
  • 3-4 garlic cloves, pressed
  • 1 teaspoon dried oregano
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cumin seeds (optional)
  • 1 teaspoon sweet paprika
  • ½ teaspoon black pepper
  • 1 cup of white wine vinegar
  • 1 cup water
  • 1 tablespoon Spanish olive oil

Instructions

  1. Fill a medium-sized stockpot with water and salt. Bring to a boil.
  2. Add the carrots and cook for 10-15 minutes until they just start to soften, but before they get too soft and mushy.
  3. Remove the carrots, drain the water, and rinse the carrots with cool water to stop the cooking process.
  4. While the carrots are cooking, in a medium bowl that can be covered, add the pressed garlic, oregano, cumin, cumin seeds, and paprika and blend.
  5. Add the vinegar and water and blend with the seasonings.
  6. When the carrots are cooked and cooled enough to handle slice them into rounds add them to the bowl. Add any additional vinegar and water in equal amounts until the carrots are covered.
  7. Place a lid on the bowl and place them in the fridge to marinate for at least 4 hours.
  8. Remove from the fridge, drain the vinegar and water.
  9. Place in a serving bowl and drizzle with olive oil before serving. Top with fresh parsley.
